In the mood for a chocolate overload, that is rich and wonderful?!?

Then this is a MUST MAKE dessert... best of all, its really easy.

"Brownie Pudding" By Ina Garten

Melt 2 sticks of butter and allow to cool.

Beat 4 eggs and 1 cup of sugar. Add 1 tsp of  vanilla.

In separate bowl combine 3/4 cup good cocoa powder and 1/2 cup of flour and 1 tsp of instant coffee.

Slowly combine flour/cocoa mixture into egg/sugar bowl.

Slowly pour melted butter into batter, mix well.

Italian Wedding Soup

Ingredients

For the meatballs:

  • 3/4 pound ground chicken
  • 1/2 pound chicken sausage, casings removed
  • 2/3 cup fresh white bread crumbs
  • 2 teaspoons minced garlic (2 cloves)
  • 3 tablespoons chopped fresh parsley leaves
  • 1/4 cup freshly grated Pecorino Romano
  • 1/4 cup freshly grated Parmesan, plus extra for serving
  • 3 tablespoons milk
  • 1 extra-large egg, lightly beaten
  • Kosher salt and freshly ground black pepper

For the soup:

  • 2 tablespoons good olive oil
  • 1 cup minced yellow onion
  • 1 cup diced carrots (3 carrots), cut into 1/4 inch pieces
  • 3/4 cup diced celery (2 stalks), cut into 1/4 inch pieces
  • 10 cups homemade chicken stock
  • 1/2 cup dry white wine
  • 1 cup small pasta such as tubetini or stars
  • 1/4 cup minced fresh dill
  • 12 ounces baby spinach, washed and trimmed

Directions

Preheat the oven to 350 degrees F.
For the meatballs, place the ground chicken, sausage, bread crumbs, garlic, parsley, Pecorino, Parmesan, milk, egg, 1 teaspoon salt, and 1/2 teaspoon pepper in a bowl and combine gently with a fork. With a teaspoon, drop 1 to 1 1/4-inch meatballs onto a sheet pan lined with parchment paper. (You should have about 40 meatballs. They don't have to be perfectly round.) Bake for 30 minutes, until cooked through and lightly browned. Set aside.
In the meantime, for the soup, heat the olive oil over medium-low heat in a large heavy-bottomed soup pot. Add the onion, carrots, and celery and saute until softened, 5 to 6 minutes, stirring occasionally. Add the chicken stock and wine and bring to a boil. Add the pasta to the simmering broth and cook for 6 to 8 minutes, until the pasta is tender. Add the fresh dill and then the meatballs to the soup and simmer for 1 minute. Taste for salt and pepper. Stir in the fresh spinach and cook for 1 minute, until the spinach is just wilted. Ladle into soup bowls and sprinkle each serving with extra grated Parmesan.

In the Mood...

...To COOK!

The last few days I have been in a mood to cook.  Its been relaxing for me, and I have really enjoyed doing it.  Leslie posted that she was planning on making homemade Vegetable Beef Soup... so guess what I made.  Soup sounded really good so Wednesday night that's what we had, and it turned out pretty great.  I cooked it in the crock pot and served it with corn bread.

Tonight I made some delish chicken, again I used my crock pot. I didn't even use a recipe...  I chopped carrorts, celery, onion and garlic into small pieces, added 2 cans of cream of mushroom soup, 1 packet of yellow onion seasoning mix, a little water, and then threw in 4 chicken legs, a chicken breast and some 4 peeled halved potatoes.   By the time I got home, the chicken was falling off the bone, and may I just add the it smelled wonderful.

Did I mention how much I like love  my crock pot, especially on the days that I work.  I get everything chopped up the night before and then in the morning throw everything in the pot, turn it on low and forget about it.  After a long day @ work, I walk in the house, and I can smell dinner waiting for me.  Needless to say I think my parents like it when I cook... It mixes things up a bit.

Hot Buttered Rum

I have found a new favorite winter drink, although it really isn't the healthiest drink, it was absolutely delish! And best of all it was super easy to make.

WHAT YOU NEED
1 stick of butter (salted)
2 cups brown sugar
1 tsp. cinnamon
1/2 tsp. nutmeg
A pinch of ground cloves
Hot Water
Dark Rum
Whipped Cream (if desired)

HOW TO MAKE IT
Let the butter soften in a med. size mixing bowl.  Add all ingredients except water and rum, and whipped cream.  Beat with beaters to combine.  This is called your "batter."

In a mug, add 2 tsp. of batter, and hot water, I used 5 oz. of water ( this would depend on the size of your mug).  Add 1 shot of Rum (3oz). Still water, rum, and batter till dissolved.

Top with whipped cream, and sprinkle with cinnamon or cinnamon sugar.

Enjoy!!

1 gal of Apple Juice
3 Cups sugar

Put Cider, juice, sugar and sticks in a huge pot, bring to a boil.  Let boil for about 10-15 minutes, and then allow the mix to cool so its warm.  Add the entire bottle of EverClear and let the good times role.
